Dakos

Ingredients:
4 large croutons (wholemeal flour)
3 ripe tomatoes
100 ml of extra virgin olive oil + 2 teaspoons for garnish
150g of fresh feta or mizithra
2 teaspoons Greek oregano
Some capers

Peel two of the tomatoes and cut them into wedges, grate the other two tomatoes and let them remarry separately.

Quickly pass the croutons under running water and let them rehydrate for a few minutes.

Oil the rehydrated croutons, if you prefer you can break them or leave them intact.

Season the grated tomatoes with salt and pepper according to your taste and cover the oiled croutons. Add the tomato slices on top.

Break up the myzithra or feta and spread it over the croutons.

Finally, add the oregano and two teaspoons of extra virgin olive oil… and your Cretan dakos are ready!

Salt and pepper according to your taste.
