Boureki is a savory pie 🥧 that is typical of Cretan cuisine. Here’s a recipe you can try:
Ingredients:
• 4 medium-sized zucchini, sliced into thin rounds
• 2-3 potatoes, sliced into thin rounds
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 cup grated kefalotyri cheese (or other hard, salty cheese)
• 1/2 cup chopped fresh mint
• 1/2 cup chopped fresh dill
• 1/2 cup chopped fresh parsley
• 2 tbsp olive oil
• Salt and pepper to taste
• béchamel sauce
Instructions:
• Preheat the oven to 190°C
• In a large bowl, mix together the zucchini, potatoes, onion, garlic, herbs, salt, pepper, and olive oil.
• Grease a 23cm round baking dish with olive oil.
• Arrange a layer of potatoes on the bottom of the dish, then top with a layer of zucchini. Repeat until you have used up all the vegetables.
• Sprinkle the grated cheese on top of the vegetables.
• Pour the béchamel sauce over the top of the cheese, making sure to cover everything evenly.
• Bake the boureki for 45-50 minutes, or until the top is golden brown and the vegetables are cooked through.
