Fried Eggplant recipe (Melitzanes Tiganites)

Fried Eggplant (Melitzanes Tiganites) is a delicious and simple Cretan dish that is easy to make at home.
Here’s the recipe:

Ingredients:

• 4 large eggplants, sliced into rounds

• 1 cup flour

• 2 eggs, beaten

• 2 cups breadcrumbs

• Salt and pepper to taste

• Olive oil for frying

Instructions:

• Rinse and slice the eggplants into rounds.

• Season the flour with salt and pepper and place it in a shallow dish.

• In another shallow dish, beat the eggs.

• Place the breadcrumbs in a third shallow dish.

• Dip each eggplant slice first in the flour, then in the beaten eggs, and finally in the breadcrumbs.

• Heat the olive oil in a large skillet over medium heat.

• Fry the eggplant slices in the hot oil until they are golden brown on both sides, about 2-3 minutes per side.

• Drain the fried eggplant slices on paper towels to remove excess oil.

• Serve hot with a sprinkle of salt and a drizzle of olive oil, if desired.

This dish is best enjoyed as a side dish or as a snack with a side of tzatziki or a refreshing salad.
