SFAKIAN PIES or SFAKIANES PITES, here the recipe!
Ingredients
500 g flour
3 tbsps olive oil
1 glass of water
500 g mizithra cheese
Cretan raki, salt, honey
Preparation
Put the flour in a bowl and pour in the olive oil, water, some salt and some Cretan raki.
Knead until it becomes a hardy dough.
Divide the dough into “balls”.
Shape each ball into a round shape, open it in the middle, fill it with 1 tbsp of mizithra cheese and rewrap it.
Mold the dough and the mizithra together, giving it the shape of a dish.
Careful molding is very important, as the pie must be very thin.
Fry the pies one at a time in a hot pan, using very little (or none) olive oil, turning them over constantly until they are cooked.
Serve the Sfakian pies warm, after adding some honey on top.
