DOLMADAKIA RECIPE (STUFFED VINE LEAVES)

Ingredients
½ kg of rice
½ kg of tender vine leaves
2-3 chopped fresh onions
2 tablespoons of chopped dill
2 tablespoons of chopped parsley
1 tablespoon of mint
300 g of olive oil
the juice of one lemon
salt and pepper.
Preparation 👩🍳
Wash the vine leaves well and after having blanched them in boiling water, let them drain well.
Prepare the filling as follows: in a saucepan, brown the onions in the oil until they soften. Add the rice, parsley, dill, mint, salt, pepper and a little water and cook for 10 minutes.
Then, once the dough has cooled, put a teaspoon in each leaf. Place it at the end where the stem is, fold the leaf first at the sides and then roll it up so that the filling does not come out.
In a saucepan, form a base with a layer of vine leaves and arrange the “dolmadakia” in circles and in successive layers. Add water, the juice of one lemon, cover with a plate to keep them in place and cook over moderate heat for about 1 hour and a half.
